Customer Rating:      Summary: chick n rice flu chaser is divine Comment: I have never written a review before, but after reading a negative review that specifically mentioned the chicken n rice flu chaser soup, i was compelled! I wish I didn't have to make it again, but my husband and I finished our big pot last wkend and I need more! Someone mentioned the unusual mix flavors ended up tasting weird (lemon, cinammon, garlic, etc) , I'd say "complex" in all the right ways. Sweet, tart, spicy and hot. So much better than your average chicken soup. Going to the market this afternoon to get started on pot #2!

The author tells you how to make really high-quality soup from scratch -- the kind you really can't get just anywhere. She gives you tips that really make a huge difference in the flavor of your soup. (For what it is worth, though, realize that some of these tips are time-consuming. These is not a cook-it-quick recipe book, by any means.) My grandmother was a New England native and a maker of homemade soups -- and these recipes rival and sometimes surpass hers. You won't find thousands of recipes here -- but you will find recipes that are appropriate for each season and each "craving." There are broth-based soups, cream-based soups, fruit-based soups, vegetable-based soups. I have several soup books, and they all have merit. But if someone forced me to give away all the others and keep only one, this is the one I would keep.

RECIPES ARE EASY TO FOLLOW AND GENERALLY DON'T REQUIRE ANY EXOTIC INGREDIENTS. TRY THE GREEK CHICKEN, LEMON AND ORZO SOUP RIGHT AWAY AND FOLLOW WITH THE EGGPLANT PARMESAN SOUP. Comment: I'll admit, I was never a big fan of soup until the school district I work at held a fundraiser and the New England Soup Factory donated 3 different soups to our cause. I was immediately blown away by the flavors. Since then, I've been stopping by the shop in Salem to fix my cravings. That is, until I got the cookbook (well, I still stop by now and then).
These recipes are great and I can easily make changes if I don't have an ingredient or if I want to try something new. I can adjust the batch sizes easily as well, though I've been making bigger batches recently and taking soup to work with me. The Indonesian carrot is amazing, so is the apple, onion, and cheddar. Wow...if you're a foodie, you'll love these combinations. Have fun cooking!

May favorites are Assyrian Chickpea, Mulligatawny, Chile con carne (best chile ever), and Flu-chaser chicken soup. Most are pretty simple and don't require a lot of strange ingredients you don't usually have. Highly recommended.
