Customer Rating:      Summary: A Behemoth Cookbook Comment: Don't get me wrong, I love this cookbook. That is, I love reading it and looking at tips on what NOT to do in a recipe, and if I have something particular in mind that I want to cook, I go to this book for a tried-and-true recipe. The major caveat is that, when I want to cook something quickly on a weeknight, when I'm starved for time - I do not haul out this monster book. It is too big to sit in my small apartment kitchen, so it has to go on my regular bookcase, and it is too big to sit comfortably on a cookbook stand. Simply put, it's an interesting, but ridiculously large five-pound behemoth of a book with 1000 pages, which makes it hard for me (as a very petite person), to pull from the shelf and quickly peruse through.
I bought it because of all the five-star reviews, enjoy reading it, and have made some of the recipes with success (!) but it's not my go-to, "grab-off-the-shelf-and-go" book. That award goes to my smaller cookbooks, like "Food Network's - How to Boil Water" and "Better Homes and Gardens - Cooking for Two," even though they're much more limited in size and scope. Though I love it, one star off for sheer unwieldiness.

Customer Rating:      Summary: The New Best Recipes Comment: I loved this cookbook, and I bought 3 more for gifts and they seemed to like it too. I love reading about the "science" behind the decisions made for recipes and techniques, although a lot of it is still opinion and conjecture...it makes for interesting reading. The packaging on the other hand was horrible. 4 heavy books in a box with little packing, left to bounce around, they popped open the box, and UPS left it outside to get snowed on. I kept the one book that got wet, but honestly, that was sub par.

IN REGARDS TO THIS COOK BOOK, VERY VERY VERY LONG EXPLANATIONS TO RECIPES THAT WERE INVENTED BY MY GRANDMOTHER'S GENERATION. THE REASON FOR THE FIVE STAR, WAS IT'S COVER ON THE BOOK.
