Customer Rating:      Summary: USED TO WORK FOR COLICCHIO Comment: Let me begin by saying I made most of these recipies working for Tom Colicchio, and I never, ever worked for a nicer chef in my career.
I used to work in Gramarcy Tavern for "Chef Hollywood" as we used to call him. I don't know if he ever heard us call him that, but it was pretty obvious that what Tom wanted more than just five star review from the Times, was to be on T.V. (we got three stars).
I tried to watch TOP CHEF a couple times, but just cant stand much television, and reality shows are the worst. So I don't know if these recipies are included in the show. I do know these recipies are complicated. Not in a bad way, but you'll have to take a couple trips to the store.
Julia Child, God bless her, tried real hard, and fought constantly with co-author Simone Beck, to make MASTERING THE ART OF FRENCH COOKING easy to cook for the average american home. Colicchio doesnt. If you have eaten at Craft or Gramarcy Tavern, liked a dish, than here is how you make it. Some ingredients might be hard to find at Safeway such as morels, ramps, and cranberry beans. Other recipies I found quiet easy, with simple instructions.
I look back at my time working for Tom as a great learning experience, with great recipies to help me remember. I guess most will buy this book based on Top Chef. I just fondly remember my time at Gramarcy Tavern with Chef Colicchio with his clean apron, always out of the kitchen and in the dining room, talking to the customers.

The recipes however are for the most part not your everyday choices. For instance, in the meat department cheeks, oxtails etc.
Some of the author's guidance is elemental, some more advanced. It is an interesting read and Tom has great confidence in his presentation. Who can argue the success of his restaurant!
Perhaps, I have been preparing food for too long, and have always been open to new challenges. I was not tempted to try any of the recipes in the book.
There were a few guidelines that he did reinforce in my prep. This book is not for everyone.
My son in law passed this book on to me. He is quite a cook or chef himself. He told me to continue to pass it on, not with much enthusiasm, but just pass it on. He would never let go of a cookbook he deemed valuable. He would only recommend or purchase another copy as a gift to be sure!

For fans of Tom, or of his incredible hit show 'Top Chef' there are some really great insights into his life growing up and his personal development as a chef in the early parts of the book.
But a cook book should be judged on the merrits of what it adds to the information of a cook and on that level this book is also wildly successful in my opinion. This is not a book to pick up if you just want to have something packed cover-to-cover with new recipes - though the recipes in here are outstanding from those I have tried so far.
What is so great is this book tries to not just equip a home cook not just with a few more written recipes which they can follow, but to equip them with the ability and skill to see recipes for themselves and the knowledge and confidence to try new things themselves.
From the layout of chapters and information, to the content of the "teaching" to the recipes themselves this is a great book and is far and away the best cook book I've encountered in recent memories. I can't recomend it enough.
